Homemade Ice Cream Sandwiches

My grandmother was my first baking instructor. I wanted to incorporate her molasses cookie recipe and Forget-Me-Nots (which were her favorite flower) into my business to honor her memory. 

One night, my partner and I were having dinner at a common table with four strangers, so we were all making small talk and once they found out that I made desserts for a living, one of them asked me what my favorite thing to make was. I had recently learned how to make really good ice cream, so it was the first thing I could think of under pressure. 

Suddenly, the idea for my business snapped together! My grandmothers molasses cookies and my vanilla bean ice cream combined into a delicious summer treat that became the flagship flavor of Forget-Me-Not Ice Cream Sandwiches.

Since I had chosen farmers markets as my ideal selling place, I wanted to incorporate local, seasonal produce into the rest of my flavors. I loved coming to the market and searching the produce stalls around me for ingredients each week to take back to the kitchen to create my next exciting flavor. I always have two classic, staple flavors available, but everything else is rotating from week to week so that what I have in my booth reflects the produce available from the farmers around me.
