Indi Bite: Gourmet quick-serve Indian cuisine
"We’re taking the fear and complexity out of Indian cuisine,” says Indi Bite owner Sanjay Jejurikar. He and his wife, Seema, decided to change the cumbersome impression of Indian food by opening Indi Bite—a quick-serve Indian grill—at Crossroads.
Before serving their first customers, the Jejurikars developed the recipes in a Seattle test kitchen. The resulting menu features traditional north and south Indian dishes and Indian interpretations of wraps and rice bowls.
The typical Indian buffet format doesn’t apply at Indi Bite. Instead, each gourmet recipe has been painstakingly documented using Indi Bite’s homemade blend of spices. They put the kitchen in front of customers so they can view the whole process. “We cook in front of people so they know what’s going in their food,” says Sanjay. “We use fresh ingredients whenever possible,” Seema adds.
Chef and manager, Jared Horton, joined Sanjay and Seema right from the beginning to learn about Indian cuisine. Horton modified the Tikka Masala and side sauces recipes for an American palate. “Everything is modern and it’s authentic,” he says. The result of their endeavor is a well-designed, clean and organized Indian restaurant that appeals to a wider audience. "The whole idea is not to make maximum money, but to make a very nice pleasant experience for Indian food,” says Sanjay.
